Cook the mixture until it is thickened. Add in the onion, Worcestershire sauce, salt, pepper, mace, cayenne pepper, and lemon rind. Bring mixture to a boil, but continue stirring constantly. Reduce to low heat and add in the crabmeat and roe or substitute and simmer while uncovered for five minutes. Do not let the mixture boil. Remove from the heat and add in the sherry while stirring. I use the canned crab from the seafood section of my butcher or grocery store. Sounds so comforting and delicious, Cynthia! The crab soup looks delicious! I will let you know how I like it. This was very good but I felt it needed more seasonings. I added Old Bay black pepper and paprika right in the roux. A bit of sherry gave it a nice flavor too. All in all a very nice recipe.
